Laughing Belly as an idea was conceived by Ashwin Valecha from his post-dining experience at several hotels, restaurants and fast-food joints, where the meal was sumptious and satisfying but led to a difficult to describe, uncomfortable sort of feeling for the next few hours; while any kind of food prepared at home, eaten in any quantity, never led to any sort of discomfort. Drawing inspiration from the Slow Food Movement, his idea was to have a restaurant that served food which makes one's belly feel good, happy and comfortable, by bringing out and preserving the natural goodness of food right till it is served. From his professional experience as a chef he knew this can only be achieved by preparing food freshly on order, using the best quality ingredients sans preservatives, artificial colours & flavourings; and the application of organic cooking techniques passed on in homes from generation to generation. So here it is, Laughing Belly in a chef-driven, fast casual concept, based on the philosophy that taste and nutrition can go hand in hand.

Chef Ashwin Valecha has tapped the plethora of his experience to make signature dining available to everyone.
Getting his first taste of hospitality at Institute of Hotel Management, Aurangabad, he specialized in culinary arts.
He has gained professional training in handling kitchen operations at various properties of the Taj group and the Leela group before handling management positions at flagship hotels like the Leela Goa, the Leela Mumbai and JW Marriott, Juhu, Mumbai.He specializes in Mediterranean cuisine but salutes the diversity and flavours of Indian cuisine. He has been extensively engaged in exploring different gastronomies and has been exploring the intricate linkages different cultures have with each other through various underlying culinary techniques.
